Tricks And Hints # 1

To avoid  crust / cookie dough being too soft to handle, always use cold  ingredients: cold water and cold butter. Really cold. Cut butter in small cubes an keep in the freezer for about 15 min before using it. Why cutting it in cubes? in that way it will be easier to break it in pieces to add it to flour mix.
